From Sweet Glazed to Savory Served: The Rigby Family’s Legacy at Valley Fair Mall
For over 25 years, Shoppers Chef was a beloved eatery inside Valley Fair Mall—first located in the north wing, and later relocating to the food court. Known for its fast yet flavorful sandwiches, hot meals, and irresistible sweets, it was a favorite stop for hungry shoppers.
The restaurant was owned by the Rigby family, who also ran the Salt Lake Donut Company at 2569 South State Street, founded in 1946 by Ashael "Ace" O. Rigby and a business partner. A World War II veteran and devoted member of the Lions Club, Ace was a pillar of the community until his passing in 1980 during a Lions International Convention. His wife LaPriel Rigby, ever dedicated, carried on the business with their children—Rodney Rigby managing day-to-day operations.
The Salt Lake Donut Company suffered a major fire in 1970 but was rebuilt. In 1979, their stake was sold to Dunford Donuts, which remains a staple in Utah bakeries today.
Through donuts and deli fare, the Rigbys nourished generations—both literally and through their example of dedication and service.
The Rigby family built a flavorful legacy in Utah with two beloved businesses: the Salt Lake Donut Company and Shoppers Chef at Valley Fair Mall. Known for serving thousands of hot meals and producing millions of donuts each year, their dedication to quality, hard work, and service became part of daily life for many Utahns. From early-morning deliveries to lunchtime sandwiches, the Rigby’s fed generations with love and care. Though both businesses are now gone, the memory of their delicious contributions lives on in the hearts of all who tasted them.
