Thirza — Whose Name Meant ‘Delight,’ and So Did Her Life

Thirza Petersen — A Life of Grace, Hard Work, and Heart

Thirza Bevan Petersen (1926–1994) was a woman whose beauty, kindness, and unwavering dedication touched countless lives. A native of Pocatello, Idaho, Thirza first caught the community’s eye as a radiant young woman crowned Gold and Green Ball Queen — a title that seemed to foretell the grace and warmth she would share throughout her life.

Her path crossed fatefully with that of Joseph “Joey” Petersen, a young sailor recently returned from World War II, one summer evening in 1946 at the Coconut Grove dance hall in Salt Lake City. From the moment he spotted “the tall, pretty, slim one” across the room, their story began — one of love, laughter, and lifelong partnership. They were married that December and quickly became inseparable companions, both in life and in business.

Together, they opened two beloved local restaurants at 4124 South Redwood Road — first Pete’s Frostop and later The Concord House Soup & Sandwich. Both quickly became neighborhood favorites, known not only for their hearty meals but for the welcoming atmosphere Joey and Thirza created. Customers didn’t just stop in for lunch — they came to visit a friend. Through long hours, laughter, and genuine care for their patrons, the Petersens became beloved neighbors and friends who truly bettered the community.

Beyond her work, Thirza was deeply devoted to her faith. She served faithfully throughout her life in The Church of Jesus Christ of Latter-day Saints, offering quiet service, compassionate listening, and an unfailing example of Christlike love.

Thirza was a patient, loving wife and mother who found her greatest joy in her family. She had a rare gift for finding the good in every person and situation, and she became a trusted confidante to family, friends, and even strangers who crossed her path. Her kindness, optimism, and inner light left a lasting impression on everyone who knew her.

Though her passing in 1994 left a void in the hearts of many, Thirza Bevan Petersen’s legacy lives on — in her family, in the memories of those who visited Pete’s Frostop and The Concord House, and in the example of a life beautifully lived with love, faith, and service.
